The winter sun shone down on my 20k today, it was pretty perfect, bright yet cool. But I didn't feel particularly great for the majority, I ran an easy pace consistently & there were moments of 'the zone' but I felt a bit creaky! & when I got home I needed a nap!! I needed to take action - 1) oil my joints & 2) relax my limbs & 3) boost my recovery & 4) feed my soul. So I have had...
1) had rose hip oil for my joint recovery in my chia seed smoothie
2) went for a Thai relaxation massage for my tired legs which worked wonders
3) I took an Epsom salts bath too to draw out the toxins & give my muscles magnesium
4) I made vegan cheesy veg bake...
I know vegan cheese is processed which I try to avoid, but this was just what I needed today!!
Sweet potato
White potato
Zucchini
Carrot
Leek
'Cheezily' dairy free cheese
1/2 cup Almond milk
Sea salt & pepper
Slice each of the veggies & the 'cheezily' & layer into a deep oven dish. (I mix it up & make patterns) Pour on milk & season as you go & finish with a cheese layer on top. Bake for an hour or until soft throughout. Beautiful cheesiness veggieness.
